Communication in Food Science and Technology (CFST) is an open access, peer-reviewed scientific journal that publishes papers covering a wide range of topics, including food chemistry and nutrition, food microbiology, food biotechnology, food processing and other topics related to food science and technology. The journal is published twice a year by the Institute Technology of Sumatera, Food Technology Study Program, Indonesia.

The editor welcomes the submission of original articles relevant to the science and technology of food and beverages. Contribution are accepted on the strict understanding that the material in whole or in part has not been, nor is being, considered for publication elsewhere. If accepted, papers will become the copyright of the journal. All published papers are peer-reviewed (double blind review). The content of the journal is available free of charge and there are no publication charges. The authors bear the sole responsibility for the content of the contribution and all submissions should be accompanied with the signed cover letter in which they declare that they have not violated any internal rules or regulations of their institutions related to the content of the contributions and that they have not submitted the paper somewhere else.
